The professional range :
A range of 5/4 boxes, (600gr net drained) where the marrons are
located in a straining container to ease up draining and therefore use
in a laboratory.
This range is composed of:
- NAPLES MARRONS IN SYRUP
- CHESTNUT PIECES IN SYRUP
- SMALL MARRONS IN SYRUP FOR DECORATION
- CANDIED CRYSTALLISED MARRONS
The small marrons in syrup for decoration are marrons of around 8 grams, crystallised in the typical French tradition. They marinade in a vanilla sugar syrup inside the straining container; they are the ideal fruit for decorating all types entremets, with marrons as their base: Bavarian cream, Christmas Yule logs... as well as for decorating ice-creams and sorbets.
